How It’s Cured
After harvesting the leaves they are kept alive throughout the yellowing period. This is essential in order for them to result in the correct color. The temperature starts at ambient and is raised up to 100 degrees Fahrenheit in increments of 2 degrees per hour. Once the yellowing process has been achieved, the leaves are thoroughly wilted and the temperature is raised to 130 degrees to prevent any further coloring or chemical changes – if it isn’t done correctly, the leaves won’t turn to their desired lemon-orange color.
